Pasta Salad Recipe

Light pasta salad. For a twist, add 1 cup light feta cheese, crumbled.

Recipe Ingredients for Pasta Salad

454 g penne
1 1/2 cups cucumber, diced
3 tomatoes, diced
1/2 cup red onion, chopped
1 tbsp oregano
1/2 cup soup, chicken broth
1/4 cup red wine vinegar
1 tbsp olive oil
1 tbsp lemon juice
1 tsp mustard
1 tsp sugar
1 clove garlic, minced
1/4 tsp black pepper

Recipe Directions for Pasta Salad

  1. Cook pasta according to package directions. Drain. Rince with cold water and drain again.

  2. In a large bowl, toss together pasta, cucumber, tomatoes, onions and oregano. Set aside.

  3. In a small bowl, whisk together broth, vinegar, olive oil, lemon juice, mustard, sugar, garlic and pepper. Pour over salad and mix well. Season with more black pepper if desired.

  4. Cover and refrigerate for at least 1 hour before serving.
