Recipe Ingredients for Pasta salad with grilled vegetables and mozzarrella

2 1tsp Olive Oil
6 oz Yellow Squash
1 small Squash, Summer, Zucchini, Includes Skin
2 medium raw Bell Pepper Red
12 oz Pasta Fusilli
2 cups Baby Spinach
6 oz Fresh Mozzarella
1 cup chopped raw Grape Tomatoes
1 medium raw Onion Red
2 tbsp Basil, Fresh
4 oz Balsamic Vinaigrette
0.25 tsp Salt, Table

Recipe Directions for Pasta salad with grilled vegetables and mozzarrella

  1. Preheat grill to medium heat. Brush squash and peppers with olive oil and grill, flipping once, until just charred in parts and tender. Transfer to a plate as done and set aside to let cool. Cut into bite-size pieces.

  2. In a large bowl, toss grilled vegetables with pasta, spinach, mozzarella, tomatoes, basil, vinaigrette, salt and pepper.
