This recipe calls for leftover turkey, but we made it with chicken. Great flavor - if you like olives & artichokes, you'll love this.

Recipe Ingredients for Pasta Salad with Chicken & Artichokes

1 lb whole wheat pasta
2 garlic cloves
1/4 c shallots, minced
5 oz artichoke hearts , in oil, drained &roughly chopped
2 chicken breasts , diced & cooked
1 tbs dried thyme
1/2 c Nicoise olives, pitted
3 oz prosciutto
2 tbs lemon juice
2 tbs dried parsley

Recipe Directions for Pasta Salad with Chicken & Artichokes

  1. Cook pasta

  2. Coat large skillet with non-stick spray, saute garlic and shallots until just softened, 1-2 minutes. Add artichokes and saute 2 minutes more, stirring. Add the cooked chicken, cook, stirring, 3 minutes. Stir in thyme, olives and prosciutto, remove from heat. Set aside and keep warm.

  3. Drain cooked pasta, put in large bowl. Add artichoke mix, lemon juice and parsley. Toss well. Add salt & pepper to taste.

  4. Serve cold or at room temperature.
