This recipe is from FoodNetwork.com and is delicious! Don't make it too far ahead of time, however; the sauce/dressing will soak into the pasta within a few hours.

Recipe Ingredients for Pasta Salad w/ Asparagus, Corn, and Sun-dried Tomatoes

2 cup Pasta Fusilli
1 cup Asparagus
1 cup Fresh Frozen Select Vegetables Sweet Kernel Corn
0.5 cup Tomatoes, Sun-dried
2 oz Mayonnaise
0.25 cup Cream, Sour, Cultured
0.5 oz Lemon Juice
0.25 tsp Garlic Powder
36 tsp Parmesan 100% Grated
2 dash Pepper, Black

Recipe Directions for Pasta Salad w/ Asparagus, Corn, and Sun-dried Tomatoes

  1. Cook the pasta per directions on the package (al dente is better than overcooked). Drain and rinse under cold water. Transfer to a large bowl.

  2. Add the asparagus, corn, and sun-dried tomatoes to the bowl with the pasta. (Keep the corn frozen instead of thawing; it will help the pasta salad chill.)

  3. Make the dressing: mix the mayonnaise, sour cream, lemon juice, garlic, parmesan, and salt and pepper to taste in a bowl. Pour over the pasta salad and toss to coat. Chill up to 3 hours.

  4. My notes: The amount of parmesan cheese is 3/4 cup (didn't have that option in my serving size) and the pasta amount is a half pound (before cooking). I doubled it to account for the water weight once it's cooked.
