Healthy Pasta with Tomato, Basil, Beans and Broccoli Salad

Recipe Ingredients for Pasta Romana e Fagioli Salad

14.5 oz Ready-Cut - Diced Tomatoes
8 oz Penne Multigrain Pasta
1/4 cup leaves, whole Basil, Fresh
1 tsp, ground Basil, Dried
2 cup, chopped Broccoli
8 oz Red Small Beans
1 tsp Garlic Powder
1 tsp Onion Powder
5 large Onions, Spring Or Scallions
1 tsp Pepper, Black
2 serving (Zito) Italian Dressing

Recipe Directions for Pasta Romana e Fagioli Salad

  1. Prepare dried red beans according to instructions (in other words, soak for a day, then drain and cook for 2 hours). Use half the package, which is half a pound.

  2. Cook the pasta and drain in a colander.

  3. Rinse green onions, fresh basil and broccoli, cut into pieces on a cutting board and put into large container.

  4. Mix in beans and pasta with onion powder, garlic powder, basil and pepper (Hint you can substitute fresh onion, garlic and peppers to make it healthier and taste even better, it won't add to much extra in calories - I just didn't have any on hand today).

  5. Add in grated Parmesan and Italian dressing (or olive oil and vinegar with spices).

  6. Mix and chill for an hour, then serve.

  7. 1 serving is about 1 cup.
