Recipe Ingredients for Pasta with roasted zucchini and tomatoes (1/2 serving)

3 small zucchini
2 pints grape tomatoes
32 oz penne, 100% whole wheat
2 tbsp olive oil
10 oz basil pesto

Recipe Directions for Pasta with roasted zucchini and tomatoes (1/2 serving)

  1. Coat zucchini and tomatoes with olive oil and roast in 400 degree oven until tomatoes burst.

  2. Cook pasta to just aldente, drain, reserving ~1 cup of pasta water

  3. combine vegetables, pesto and pasta in bowl, add water to loosen pesto if necessary
