Make ahead. Any pasta will do, but I like Angel Hair or Penne. I used 3 Morningstar Italian sausages. Good with salad and broccoli.

Recipe Ingredients for Pasta and Roasted Veggies

2 c penne
6 morningstar breakfast veggie links, chopped
1 c broth
2 c tomatoes, roasted
1/2 c eggplant, roasted
1/4 c squash, yellow roasted
1/4 c carrots, roasted
1/4 c onions, roasted
3/4 c parmesan, grated

Recipe Directions for Pasta and Roasted Veggies

  1. Boil pasta. Add everything else except the cheese. Pour into a covered casserole. Let sit. Reheat to serve in casserole in oven with sprigs of rosemary stuck in it here and there. 400 degrees until warm and bubbly.

  2. Pass the parmesan at the table.
