Fairly easy pasta with roasted squash and crispy sage leaves. A bonus is leftover sage oil, which is fabulous for roasting the next batch of veggies.

Recipe Ingredients for Pasta with Roasted butternut squash and sage

1 3/4 lb butternut squash, roasted
2 cloves garlic, roasted
2 T olive oil
12 oz pasta
1 T fresh sage leaves
1 t sea salt
2 T parmesan, grated

Recipe Directions for Pasta with Roasted butternut squash and sage

  1. Preheat oven to 400F.

  2. Cut squash into bite sized cubes, slice garlic.

  3. Shake squash and garlic in a bag with 1T oil.

  4. Roast squash and garlic at 400 for about 25 minutes, until browned.

  5. Tear sage leaves into large pieces.

  6. Saute in enough olive oil to cover -- cook until crisp. Reserve extra sage oil.

  7. Boil and drain pasta. Add hot squash, garlic, salt, and top with crispy sage leaves.
