I grew up in an Italian household and this was one of the staples. Of course, it is a mortal sin to use canned clams, but one has to cut corners somewhere. If you wish to use fresh clams, add about 1 pound in their shells to the sauce, cover and simmer until the clams open up.

Recipe Ingredients for Pasta and Red Clam Sauce, Nana's Style

1 med onion
2 cloves garlic
2 cans minced clams
1/2 pound pasta
1 tomatoes, plum diced, canned goods (Large can)
2 tbs Extra Virgin Olive Oil
1/4 cup fresh basil
1 tbs salt
3 tbs grated Parmesan Cheese

Recipe Directions for Pasta and Red Clam Sauce, Nana's Style

  1. Get the water on for th pasta. Please just cook pasta to coincide with the completion of the sauce.

  2. Dice onion and garlic. Put Olive Oil and onion and garlic into pot and sautee until onions begin to turn translucent.

  3. Put the can of tomatoes with all of the juice into pot. Add salt. Chop basil and add. Open cans of clams and drain juice into pot.

  4. Bring to a boil. At this point add the clams so they can heat up. They are already cooked so don't leave them for too long because they will get rubbery.

  5. Use tongs to take the pasta out, it should be al dente by now and add it to the sauce. Stir the pasta with the sauce and serve with the grated parmesan over the top.

  6. Feast!
