Healthier variation on pasta puttanesca. Uses less oil and omits the cheese.

Recipe Ingredients for Pasta Puttanesca

300 g pasta
500 g crushed tomatoes
5 cloves garlic
1 tbsp olive oil
1 pinch cayenne pepper
1/2 tsp salt
1 pinch dried herbs
100 g sardines
1/4 c. black olives
2 tbsp capers

Recipe Directions for Pasta Puttanesca

  1. While you're preparing the sauce, bring a large pot of well-salted water to a boil.

  2. Over medium high heat, briefly stir-fry the garlic and the drained and crumbled sardines. Add the chopped and pitted olives and the chopped capers, and fry for another 2-3 minutes. Don't let the garlic brown. Add the tomatoes, stir well, and turn the heat down to medium.

  3. Add the pasta to the water and cook according to package directions.

  4. Add a generous pinch of dried Mediterranean herbs to the sauce, as well as cayenne pepper and salt to taste. Simmer the sauce an additional 5-10 minutes while the pasta cooks, or until thickened.

  5. Drain the pasta and return it to the pot. Stir in the sauce and serve.
