Makes 4 servings



Lower calorie version of traditional puttanesca. Use canned or fresh tomatoes.

Recipe Ingredients for Pasta Puttanesca

1 tbsp olive oil
4 cloves garlic minced
1/3 c chopped black olives
1 tbsp capers
3 tomatoes
1/3 c chopped parsley
1/2 tsp pepper
1/2 tsp red pepper flakes
250 g pasta

Recipe Directions for Pasta Puttanesca

  1. Heat olive oil in large frying pan and add minced or crushed garlic. Cook over low heat for a minute or two.

  2. Chop tomatoes, and them with the olives and capers to the garlic. Cook over medium heat for 10-15 minutes, or until sauce begins to thicken, stirring occasionally. Add parsley, pepper, and red pepper flakes.

  3. Serve over al dente pasta.
