Rustic Italian-Can be used as a side dish or add 2 cups chicken or shrimp to make a main dish.

Recipe Ingredients for Pasta Putinesca

8 oz Rice Spaghetti Style Pasta
2 cup Petite Cut Diced Tomatoes
2.5 cup Spinach
0.5 cup leaves, whole Basil, Fresh
6 oz Manzanilla Pimiento Stuffed Olives
4 oz Italian Fresh Mozzarella
4 cloves, raw Garlic
2 tbsp Extra Virgin Olive Oil

Recipe Directions for Pasta Putinesca

  1. Cook Pasta according to pkg directions- drain

  2. meanwhile- Saute chopped garlic in olive oil in large skillet @2min.

  3. add greens and saute @2-4 mins

  4. add tomatoes and cook stirring to mix @ 5-7mins.

  5. add capers & olives cook 2 mins more.

  6. Add drained pasta and tyoss w/ tongs to mix well.

  7. Remove from heat and add slices of mozzarella to cover top- cover and let stand 5-10 mins.

  8. serve with grated parmesan
