So named for the prostitues that used to make it - lore has it either to lure in the customers with the wonderful aroma, or between Johns because it was quick.

Recipe Ingredients for Pasta Putenesca

28 oz tomatoes, whole canned
1/4 c black olives, chopped
3 cloves garlic, crushed
2 T olive oil
1 T capers
1 can anchovies
8 c pasta , cooked
1 tsp oregano
1/2 tsp red pepper flakes

Recipe Directions for Pasta Putenesca

  1. Note: I put in black olives for CC, but you need to get oil-cured black olives. Trader Joes has them pitted.

  2. Cook 1lb of pasta - spaghetti or linguini is best, per package directions.

  3. Heat a large skillet to medium and add olive oil. Add garlic, but do not burn. Add tomatoes, chopping up with spoon. Add the olives, capers, oregano, and pepper flakes.

  4. Bring to a boil, then turn down to a simmer.

  5. Drain anchovies on a paper towel, then chop.

  6. Add anchovies to sauce and cook another 2-5 minutes.

  7. Your pasta should be cooked by now. Drain and add to sauce to coat.
