Recipe Ingredients for Pasta Primavera Sauce

1/2 cup tomatoes, chopped
1/4 cup vegetable broth
2 tsp extra virgin olive oil
1/2 hot chili pepper
2 cloves garlic
1/2 cup broccoli
1/2 cup zucchini, chopped
2 tbsp fat free cream cheese
1 tbsp parmesan cheese
1/2 cup mushrooms, sliced

Recipe Directions for Pasta Primavera Sauce

  1. Cook the pasta according to package directions. Drain well.

  2. Steam the broccoli, zucchini, and mushrooms until tender. In a saucepan, saute the garlic and chili pepper in the oil, then add the tomatoes. Heat slowly, stirring gently.

  3. In another pan, combine the broth, cream cheese and parmesan cheese and blend well. Add the steamed vegetables and tomato/garlic mixture. Spoon the mixture over the pasta and serve immediately.
