Recipe Ingredients for Pasta Primavera

36 oz Fusilli
1 cup Peas, Edible-podded
2 medium Carrots
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
0.25 cup Olive Oil
4 clove Garlic
16 oz Tomatoes
0.25 tsp Pepper, Red Or Cayenne
1 oz Mint
0.5 cup Parmesan, Grated Cheese
4 ounce Chevre

Recipe Directions for Pasta Primavera

  1. Ingredient List:

  2. Kosher salt

  3. 12 ounces fusilli or other corkscrew pasta

  4. 1/2 pound sugar snap peas, halved lengthwise, or broccoli florets (or a combination)

  5. 2 carrots, shredded

  6. 1 yellow bell pepper, cut into thin strips

  7. 1/4 cup extra-virgin olive oil, plus more for drizzling

  8. 4 cloves garlic, thinly sliced

  9. 1 pint cherry tomatoes, halved

  10. 1/4 to 1/2 teaspoon red pepper flakes

  11. 1/2 cup roughly chopped fresh mint

  12. 1/2 cup grated parmesan cheese

  13. 4 ounces goat cheese, crumbled

  14. Bring a large pot of salted water to a boil. Add the fusilli and cook as the label directs.

  15. Add the sugar snap peas and/or broccoli, carrots and bell pepper to the boiling water during the last 2 minutes of cooking.

  16. Reserve 1/2 cup cooking water, then drain the pasta and vegetables and return to the pot.

  17. Meanwhile, heat the olive oil in a large skillet over medium heat.

  18. Add the garlic and cook until just golden, about 30 seconds.

  19. Add the tomatoes, red pepper flakes and 1 teaspoon salt

  20. Cook until the tomatoes begin to wilt, about 2 minutes.

  21. Stir in 1/4 cup of the reserved cooking water.

  22. Pour the tomato mixture over the pasta and vegetables.

  23. Add the mint, parmesan and half the goat cheese and toss to combine. Season with salt.

  24. Divide the pasta among bowls. Top with the remaining goat cheese and drizzle with olive oil for the extra fat.
