My recipe based on what I had on hand on Oct 17, 2007.

Recipe Ingredients for Pasta Primavera

1 medium yellow squash, sliced
1 medium zucchini, sliced
1 tomato, yellow, diced
1 tomato, red, diced
1 scallion, diced
1 cup fresh baby spinach
1/3 cup part-skim mozzarella cheese,shredded
8 ounces pasta
1 tbsp olive oil
1 tbsp vinegar

Recipe Directions for Pasta Primavera

  1. Prepare pasta according to package directions. Drain and transfer to salad bowl.

  2. Steam yellow squash, zucchini, and spinach for 3-4 minutes, drain, and add to pasta.

  3. Add diced tomatoes, scsllion, and cheese, stire to mix, and dress with oil and vinegar.

  4. Season to taste with freshly-ground pepper and salt-free herb mix if desired.
