Recipe Ingredients for Pasta Primavera

1/4 lb fresh asparagus spears, diagonally sliced into 1-inch pieces
1/2 cup broccoli florets
1/2 cup fresh snow pea pods, trimmed and diagonally sliced into 1-inch pieces
1/2 cup sliced yellow squash
1/2 cup sliced zucchini
1 sec vegetable cooking spray
1/4 lb fresh mushrooms, sliced
1 clove garlic, minced
1 tbsp chopped fresh chives
9 oz fresh linguine, uncooked
1/4 cup canned vegetable broth
2 tbsp dry white wine
3/4 cup skim milk
1 tbsp whole wheat flour
1/3 cup grated Parmesan cheese, divided
1 tbsp chopped fresh parsley
1 1/2 tsp chopped fresh basil
1 serving salt substitute

Recipe Directions for Pasta Primavera

  1. Arrange first 5 ingredients in a vegetable steamer over boiling water. Cover and steam 15 minutes or until crisp-tender.

  2. Coat a nonstick skillet with cooking spray; place over medium-high heat until hot. Add mushrooms and garlic; saute 5 minutes. Add steamed vegetables and chives. Reduce heat; simmer, uncovered, 5 minutes.

  3. Cook linguine according to package directions, omitting salt and fat. Drain.

  4. Combine vegetable broth and wine in a saucepan. Bring to a boil; cook until reduced to 2 tablespoons. Combine milk and flour. Add to broth mixture. Cook over medium heat 5 minutes, stirring constantly. Pour over pasta; toss. Add 1/4 cup cheese and next 3 ingredients; toss. Top with vegetable mixture; sprinkle with remaining cheese. Yield: 4 servings.
