Recipe Ingredients for Pasta Primavera

6 oz. whole wheat penne
1 c. chopped extra firm tofu
1/4 c. sundried tomatoes
1 cup chopped spaghetti squash
1/2 c. chopped asparagus
1/5 c. chopped broccoli
1 c. grape tomatoes
4 cloves garlic, minced
1/4 c. chopped fresh basil
1/2 c. lemon juice
3 tbs olive oil
1 salt and pepper, to taste

Recipe Directions for Pasta Primavera

  1. Bring water to boil and add pasta. Cook according to package directions.

  2. Saute garlic and tofu in olive oil until browned. Add lemon juice.

  3. Add chopped broccoli and asparagus. Cook 3 minutes.

  4. Add sundried tomatoes and spagetti squash. Cook 3 more minutes.

  5. Add fresh basil and grape tomatoes. Cook until basil is just wilted. Add salt and pepper to taste.

  6. Add cooked pasta and mix evenly. Enjoy!
