Lighter version of pasta primavera

Recipe Ingredients for Pasta Primavera Light

242 grams Fat Free Half and Half
100 grams Trader Joe's Grated Parmesan Cheese
13 1/4 oz Dreamfields Spaghetti
2 cups carrots
1 1/2 cup Peas, Green

Recipe Directions for Pasta Primavera Light

  1. While bringing pasta water to a boil, dice carrots.

  2. When water boils, add pasta. When water comes back to a boil, add peas & carrots. Cook for whatever time the box says.

  3. Drain pasta & veggies.

  4. In same pot, melt the butter over medium heat, then add the half & half. Bring to a simmer and add fresh grated nutmeg to taste. Let simmer for about 2-3 minutes then add pasta & veggies.

  5. Stir pasta and veggies to coat with sauce, then add cheese. Turn off heat and mix well to ensure even distribution of sauce & cheese.
