Recipe Ingredients for Pasta Primavera with Chicken

1/2 lb asparagus
1/2 lb green beans
2 orange peppers
1 lb chicken
1 lb spaghetti
3/4 c chicken broth
3/4 c half-and-half
3/4 tsp salt
1/4 tsp black pepper
1/4 tsp nutmeg
2 tbsp olive oil
5 cloves garlic
2 c grape tomatoes
1/3 cup grated Parmesan
1/4 cup flat-leaf parsley

Recipe Directions for Pasta Primavera with Chicken

  1. In frying pan, heat oil, add garlic, brown 30 sec, then add chicken.

  2. Boil large pot of salted water, add asparagus and green beans, cook 4 min. Add peppers and cook 1 more minute. Scoop out vegetables with large slotted spoon and place in colander.

  3. Add pasta to boiling water, cook according to package instructions, drain, return to pot.

  4. While pasta is cooking, place half-and-half, chicken broth, salt, pepper, and nutmeg in a small saucepan, bring to simmer over medium heat.

  5. Add cooked vegetables and tomatoes to cooked chicken. Cook, stirring a few times, for 90 sec. Spoon into pasta pot. Stir in grated cheese into the half-and-half mixture. Add to the pasta and gently stir in parsley until all ingredients are combined. Allow to stand for 5 min.
