Yummy, high-fiber, high vitamin C spinach pasta dish.

Recipe Ingredients for Pasta Prima Vera

2 ounce Spinach Spaghetti
2 ounce cherry tomatoes
2 ounce sweet pepper
1/2 ounce green onion
1 cup summer squash
3 ounce frozen shrimp
1 tbsp Olive Oil
2 tsp Olive Oil spread
1 tbsp Parmesan
1 dash of salt
1 dash of pepper

Recipe Directions for Pasta Prima Vera

  1. Boil spaghetti according to package directions.

  2. Sautee sliced peppers in 1 Tbsp olive oil until soft and beginning to brown. Add tomatoes, onion, and sliced squash and saute until squash and tomatoes are cooked through. Add shrimp and stir and cook until shrimp are cooked through. Add salt and pepper to taste. Add drained spaghetti and 2 tsp olive oil margarine and toss to coat. Transfer all to a plate and sprinkle with 1 tbsp parmesan cheese.

  3. Makes a large serving or two small.
