Recipe Ingredients for Pasta with Pistachio-Lemon Pasta

1 pound whole grain pasta
10 ounces baby spinach
1/4 cup chopped shallots
1/4 cup lemon juice
1/3 cup extra-virgin olive oil
1 cup shelled unsalted pistachios, toasted

Recipe Directions for Pasta with Pistachio-Lemon Pasta

  1. Bring a large pot of salted water to boil, and cook the pasta until al dente. When the pasta is finished, add the spinach to the pot and stir until just wilted. Reserve about a cup of the cooking water, then drain the pasta and spinach.

  2. While the pasta cooks, prepare the pesto: Place the shallots, lemon juice, olive oil, and toasted pistachios in a blender or food processor and pulse, scraping down the sides with a spatula, until finely shopped. It's fine if some of the pistachios remain whole.

  3. Place the drained pasta and spinach in a serving bowl and toss with the pesto and enough of the reserved cooking water to coat the pasta. Season with salt and pepper to taste.
