Recipe Ingredients for Pasta Pesto

2/3 cup basil pesto
9 oz. fettuccine
1 tbsp. olive oil
3 cloves garlic, minced
1 red bell pepper
1 tsp. salt
1 1/2 tsp. black pepper
1/4 cup grated parmesan cheese

Recipe Directions for Pasta Pesto

  1. Preheat oven to 450F.

  2. Cut the red pepper in half and remove the seeds; then place them skin-side up on a baking sheet. Roast for 15-20 minutes or until lightly browned.

  3. Cook the pasta according to the package instructions.

  4. While the pasta is cooking, heat the oil in a large skillet over medium-high heat. Add the garlic and cook, stirring until soft and fragrant, about 30 seconds. Add the peppers and cook, stirring until hot, about 3 minutes. Season with salt and pepper.

  5. Drain the cooked pasta, reserving 1/3 cup of the pasta water. Whisk the pasta water into the pesto in a large bowl.

  6. Add the pasta and cheese to the pesto and toss to combine. Add the veggie mixture and combine. Divide the pasta among 4 bowls and serve immediately.
