Modified pasta salad recipe, with less mayo, and stuffed pasta. Pesto has been modified for less surface area.

Recipe Ingredients for Pasta, Pesto, and Peas

2 1/3 cup Herb Chicken Tortellini
2 1/3 cup Spinach Cheese Tortellini
1 package Portebello Ravioli
1 1/4 cup olive oil
1/4 cup pine nuts
3 tbs garlic, chopped
4 cups basil
1 teaspoon salt
1 teaspoon pepper
1 1/4 cup Parmesan
10 ounce frozen spinach
3 tbs lemon juice
1/4 cup mayonnaise
1 cup frozen peas

Recipe Directions for Pasta, Pesto, and Peas

  1. Combine pine nuts, garlic, basil, salt, and pepper in a food processor.

  2. Blend, slowly adding 1 cup olive oil.

  3. Add 1 cup Parmesan, blend.

  4. Add thawed and drained spinach, blend.

  5. Set aside.

  6. Boil pasta, until tender.

  7. Drain, allow to cool with 1/4 olive oil mixed in, to prevent sticking.

  8. Mix with pesto, thawed peas, and remaining Parmesan.
