Shell the peas while the water comes to a boil

Recipe Ingredients for Pasta and Peas

8 oz whole wheat pasta, rotini
2 tbsp extra virgin olive oil
1 cup fresh english peas
2 tbsp fresh basil, julienned
2 scallions, chopped white and green parts
2 tbsp vegetable broth
1/4 tsp kosher salt
1/8 tsp ground black pepper
1 tbsp parmesan cheese, freshly grated

Recipe Directions for Pasta and Peas

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

  2. Heat the olive oil in a saucepan over medium heat. Stir in the green onions, and season with salt. Cook until green onions are golden brown.

  3. Mix in the peas, vegetable broth and basil, and continue cooking until heated through. Toss with cooked pasta to serve.

  4. Garnish with Parmesan cheese
