Aged myzithra is a salty cheese made from sheep's cheese. The sweet smoked paprika is a realy treat.

Recipe Ingredients for Pasta with Oregano, Paprika and Aged Myzithra

8 ounces dry pasta
4 tablespoons butter
4 tablespoons olive oil
4 garlic cloves (crushed or minced)
2 teaspoons oregano
1 teaspoon paprika (smoked sweet paprika)
1/4 cup feta cheese (manouri cheese or Myzithra cheese)

Recipe Directions for Pasta with Oregano, Paprika and Aged Myzithra

  1. Cook the pasta in a large pot.

  2. Meanwhile in a smaller pot, slowly heat the butter with the olive oil and garlic. When the oil begins to sizzle a little, add the oregan and the paprika. Cook the spiced oil/butter mixture at a medium-low heat for a minute or two, unitl the flavors meld together, watching to make sure it doesn't burn.

  3. When the pasta is cooked and drained, toss it with as much of the spiced butter/oil mix as you like. Serve the pasta topped with plenty of grated cheese.
