Very rich tasting with very little oil

Recipe Ingredients for Pasta with onion, goat cheese and walnuts

1 tablespoon olive oil
2 medium onions, thinly sliced
2 garlic cloves
1/4 cup dry white wine
1/2 pound spaghetti
1/3 cup fresh basil, chopped
3 tablespoons walnut pieces, toasted
1 ounce goat cheese, soft type

Recipe Directions for Pasta with onion, goat cheese and walnuts

  1. Heat olive oil in skillet. add onions and 1/2 teaspoon salt. Saute over meduim heat for about 10 minutes until onions begin to soften. Add chopped garlic and cook until onions are carmelized, scrapping pan often. Add wine to deglaze the pan and simmer over low heat.

  2. Bring large pot of water to boil. Add 1 teaspoon salt and pasta and cook until al dente. Just before draining, add 1/4 cup of pasta water to the onions. Drain pasta. Add onions along with walnuts and basil. Season with salt and pepper. Crumble in cheese and serve immediately
