Sauteed vegetables over cooked and drained pasta, topped with parmesan. A light dinner.

Recipe Ingredients for Pasta with Mushrooms, Asparagus, Corn & Tomato

7 oz. corn, fresh
5 1/2 oz. asparagus, fresh
4 oz. mushrooms, fresh
10 oz. tomatoes, fresh
1 tbsp. garlic, minced
3 tbsp. olive oil
5 oz. pasta, cooked & drained
2 tbsp. parmesan cheese, grated
1 pepper to taste

Recipe Directions for Pasta with Mushrooms, Asparagus, Corn & Tomato

  1. Bring water to a boil. Add salt and pasta. Cook until done as per package instructions (about 7-9 minutes). Drain.

  2. While pasta is cooking, start the vegetables.

  3. Heat oil over high heat. Add minced garlic and mushrooms. Saute until golden. Add asparagus and saute 2 minutes, then add about 1 ounce of water, cover, and turn down to steam for 1-2 minutes. Add corn and toss. Dice and add tomatoes. Heat all together, tossing to blend for 3-4 minutes over medium-high heat.

  4. Put pasta on plate & top with sauteed vegetables & grated parmesan cheese & pepper.
