Recipe Ingredients for Pasta, Linguine with fresh arugula & roasted yellow pepper sauce

4 pepper,+large+3-3/4"+long,+3"+dia yellow peppers
1/4 cup olive oil
2 cloves garlic, peeled and minced
1 tablespoon cream cheese
1 tablespoon kosher salt
1 teaspoon black pepper
1 pound dry linguine
2 cups arugula lettuce, coarsely chopped
1/2 cup parmigiano cheese, grated fresh

Recipe Directions for Pasta, Linguine with fresh arugula & roasted yellow pepper sauce

  1. Heat broiler to high, cut peppers in half lengthwise and remove seeds and core. Place peppers cut-side down flattened on foil-lined baking sheet, and broil, until skin is blackened and blistered all over. Cover loosely with foil, and let cool enough to handle, remove charred skins. (Doing under running water is helpful, Pat peppers dry.)

  2. Place peppers in a blender and process until pureed and smooth.

  3. Heat the olive oil in a sauce pan. Add the minced garlic, salt, black pepper and the pepper puree, and stir until well combined. Whisk in the cream cheese until smooth, taste and adjust seasoning with salt and pepper. Set aside.

  4. Heat a large pot of water to boiling, and add lots of salt. Add linguine, cooking, stirring now and then , until dente. Drain and place in serving bowl. Add yellow pepper sauce and arugula lettuce ( romaine works ), and toss to combine.

  5. Serve with grated parmigiano cheese.

  6. Serves 4 or two hungry Hudsons.
