Recipe Ingredients for Pasta 'inferno'

400 g penne rigate
800 g tinned chopped tomatoes
12 leaves fresh basil
16 g Parmesan
1 salt and black pepper
250 g reduced fat Mozzarella
3 basil leaves

Recipe Directions for Pasta 'inferno'

  1. To cook the pasta, boil a kettle full of water, and pour over a pan of dry pasta to cover, bring back to the boil then turn down the heat and cook on a timer for 10 minutes.

  2. For the sauce, add the oil and tomatoes to a large pan at the same time, heat gently for 5 minutes then add the mozzarella, parmesan and basil (chopped) season to taste, when the cheese is melted drain the pasta and mix both sauce and pasta together in a large oven proof dish, and bake in the oven for 10 minutes.

  3. Serve hot, goes well with ciabatta bread.
