Recipe Ingredients for Pasta with Ham and Peas

300 g pasta
1 tbsp olive oil
1 small onion, (or preferably shallot)
1 clove garlic, crushed
70 g pancetta (half a double pack cubetti)(or 200g leftover gammon)
200 g peas, from frozen
100 ml creme fraiche
2 egg yolks
75 g parmesan cheese, grated

Recipe Directions for Pasta with Ham and Peas

  1. Cook pasta

  2. Fry shallot and garlic over low heat

  3. Heat ham, peans and cream to gentle simmer in another pan. Remove from heat and add egg yolks, parmesan and seasoning, Mix well so eg does not scramble. Add garlic and shallot, toss through pasta and serve.
