Recipe Ingredients for Pasta with Greens

1/2 c sun-dried tomatoes
1 lb dried pasta (penne, shells, etc.)
1 lb greens (beet, chard, kale, or mixture)
2 T olive oil
1 large onion, thinly sliced
1/2 t red pepper flakes
2 garlic cloves, minced
1 T dried basil or (6 T fresh)
2 T capers

Recipe Directions for Pasta with Greens

  1. Soak the sun-dried tomatoes in hot water until soft, about 10 minutes. Drain and chop.

  2. Begin cooking the pasta and watch to prevent over-cooking.

  3. Prepare greens: wash, drain, remove all coarse stems. Chop coarsely.

  4. Heat olive oil in a skillet, add onion, and red pepper flakes, and saute over medium-high heat.

  5. When onions begin to color, add tomatoes and chopped greens, tossing well to wilt.

  6. Mash in garlic, add basil, and cook for five minutes.

  7. Add capers.

  8. Drain pasta, and mix with vegetables.

  9. Grate parmesan over top if desired.
