Recipe Ingredients for Pasta, Greek Pastitsio

2 pounds ground beef
6 garlic cloves, minced and divided
4 teaspoons cinnamon
2 teaspoons dried oregano
1/2 teaspoon hot red pepper flakes
1 teaspoon salt
1 tablespoon pepper
32 ounce can tomatoes, crushed
8 ounces tomato sauce
1/4 cup dry red wine
1 pound penne
12 ounces fat free evaporated milk
1 1/2 cups vegetable broth
3 tablespoons butter
1/3 cup all purpose flour
1 1/2 cups parmesan cheese
1/4 teaspoon nutmeg
2 eggs

Recipe Directions for Pasta, Greek Pastitsio

  1. In a large pot cook meat until it loses its raw color and begins to sizzle.

  2. Add 4 garlic cloves, cinnamon,oregano, pepper flakes, salt and pepper. Cook about 2 minutes. Add tomatoes, tomato sauce and enough dry red wine for a sauce that is neither too gloppy nor too thin. Bring to a boil, reduce heat to medium - low and continue to simmer, partly covered, until sauce is thick and richly flavored, about 20 minutes.

  3. Cook penne in 2 quarts of salted water until done, drain, return to pot and stir in 1 cup of meat sauce.

  4. Microwave milk and broth until steamy hot.

  5. Heat butter and remaining garlic cloves in a large saucepan until garlic is golden, whisk in flour until well blended. Pour in hot milk mixture all at once; whisk until sauce is smooth and starts to bubble and thicken.

  6. Stir in 1/2 cup of the cheese and season with nutmeg; salt and pepper to taste. Adding them one at a time, vigorously whisk in eggs. Remove sauce from heat.

  7. Position rack to middle position in oven and heat to 425.

  8. Spread half of penne over bottom of 9 X 13 inch baking pan, top with meat sauce, 1/2 cup of the cheese, another layer of penne, the white sauce and remaining 1/2 cup of cheese.

  9. Cover pan with foil; bake until very hot, about 30 minutes. Remove foil and turn oven to broil until cheese is spotty brown, about 3 - 5 minutes. Remove from oven and let stand to set, 10 to 15 minutes. Cut into portions and serve.
