Recipe Ingredients for Pasta with fresh greens and red beans

1 lb pasta - cooked
2 bunches of spinach (or any other green leafy vegetable: bok choy, kale, escarole, etc.)
28 oz diced tomatoes
14 oz red beans
1 clove of garlic, diced
1 onion, diced
1 tbsp olive oil

Recipe Directions for Pasta with fresh greens and red beans

  1. saute garlic & onion in the oil until tender

  2. add the greens and cook until wilted

  3. add the tomatoes & beans

  4. simmer for 15-20 minutes
