Pasta Fajioli Soup (like Olive Garden) - Serving size: 1 cup

Recipe Ingredients for Pasta Fajioli

24 oz Beef, Ground, 90% Lean Meat / 10% Fat, Crumbles
1 medium (2-1/2" dia) Onions
1 cup, grated Carrots
1 cup, diced Celery
2 clove Garlic
12 oz Tomato Juice
28 oz Diced Tomatoes
15 oz Kidney Beans Dark Red
15 oz Great Northern Beans
16 oz Tomato Sauce
1.5 tsp Sea Salt
0.25 tsp Pepper, Black
1 tsp Oregano
1 tsp, leaves Basil, Dried
1/4 teaspoon Red Pepper, Ground

Recipe Directions for Pasta Fajioli

Brown ground beef (or part ground beef, part sweet Italian ground sausage). Remove from pan and drain most of grease. In same pan, cook chopped onion, shredded carrot, celery and pressed garlic for about 10 minutes, or until softened. In soup pot or crock pot, combine all ingredients except pasta. Cook approximately 1 hour on stove top, or 4 hours on high/ hours on low in crock pot. Boil macaroni separately, then add to soup right before servings.
