Wonderful and quick vegetarian soup from Gina's skinny recipies.

Recipe Ingredients for Pasta Fagioli

1 tbsp Olive Oil
0.5 medium (2-1/2" dia) Onions
3 clove Garlic
1 stalk, medium (7-1/2" - 8" long) Celery
1 medium Carrots
15 oz Beans Cannellini
15 oz Tomato Sauce
1 leaves Bay Leaves
1 tbsp, ground Basil, Dried
1 tbsp Parsley, Dried
1 tbsp Oregano, Ground
28 oz Vegetable Broth
2 cup (8 fl oz) Water
6 oz Pasta Small Shells

Recipe Directions for Pasta Fagioli

In a deep pot saute the onion and the garlic. in olive oil over medium heat. She says to blend the beans but I skip that part. Add all ingredients except for the pasta to the pot. Bring to a slow boil then let simmer for 20 minutes. Add the pasta and cook until al dente. Ladle into soup bowls and top with parmesan or romano cheese.
