Easy to make! 1 pot of delicious goodness. You can substitute jarred sauce and different greens like escarole, swiss chard and spinach.

Recipe Ingredients for Pasta Fagioli

12 oz whole wheat pasta
20 oz tomatoe puree
13 oz diced tomatoes
1 c zucchini
1 1/2 cups red kidney beans
1 1/2 cups lentils (cooked)
13 oz mushrooms
3 cups kale
1 cup onion
1/3 cup celery
1 cup pepper
2 tbsp minced garlic

Recipe Directions for Pasta Fagioli

  1. boil kale in pot of water until done (30 min)

  2. saute onion, celery and pepper

  3. add garlic

  4. add remaining veggies and simmer until done (20 minutes)

  5. Cook pasta and add to veggie sauce

  6. serve with salad
