Recipe Ingredients for Pasta Fagioli

1 pound ground beef
1 cup chopped onion
1 large carrot, thinly sliced
3 stalks celery, cut on diagonal
2 cloves garlic, minced
28 oz tomatoes, diced
15 oz kidney beans, with liquid
15 oz great northern beans, with liquid
15 oz tomato sauce
12 oz V8 Juice
1 tablespoon white vinegar
1 1/2 tsp. salt
1 tsp. oregano
1 tsp basil
1/2 tsp pepper
1/2 tsp thyme
1/2 pound macaroni noodles, (ditali pasta)

Recipe Directions for Pasta Fagioli

  1. Brown the ground beef and drain excess fat. Add the rest of ingredients, except macaroni, and bring to a boil.

  2. Turn heat down to simmer and cook for 50 minutes. Add pasta that has been cooked to al dente and drained.

  3. Cook another 10 minutes and serve.
