Recipe Ingredients for pasta fagioli

3 tbsp. extra virgin olive oil
1 lb. yellow onions, halved, sliced
8 cloves garlic, finely chopped
1 lb. lean ground beef
2 quarts reduced sodium chicken broth
16 oz. no salt added tomato sauce
29 oz. no salt added diced tomatoes
2 cups water
2 tsp. italian seasoning
1 lb. elbow macaroni
1 lb. carrots, sliced into coins
15 oz cannellini beans
30 oz. cans black beans
15 oz garbanzo beans
8 oz capicola

Recipe Directions for pasta fagioli

  1. heat oil in a large pot over medium-high heat. add onion and saute until translucent. add garlic and cook for 2 minutes. add ground beef, saute until just brown. stir in broth, water, tomato sauce, diced tomatoes with its juice and italian seasoning. bring to boil. add pasta and carrots, cook pasta according to package directions minus 2 minutes, stirring occasionally.

  2. lower heat to medium-low. stir in beans and capicola. salt and pepper to taste. heat through for two minus. turn off stove and remove from heat. careful not to overcook pasta.

  3. makes 32 1-cup servings.
