Pasta and cannellini beans in a tomato broth

Recipe Ingredients for Pasta Fagioli

1 tbsp. olive oil
2 stalks celery
2 carrots
4 cloves garlic
800 g. canned tomatoes
1 litre chicken stock
300 g. ditalini
150 g. cannellini beans

Recipe Directions for Pasta Fagioli

  1. saute celery, carrots and onion in olive oil until tender.

  2. add garlic.

  3. add tomatoes, broth, basil, parsley, freshly ground pepper. Simmer 20 minutes. hand blend a bit if desired

  4. boil ditalini until a bit before al dente, about 8 minutes.

  5. add beans, remove from heat.
