Recipe Ingredients for Pasta Fagioli

1/4 small onion, diced
1 cloves garlic, minced
1/4 bell pepper, diced
1 stalk celery, chopped
1/2 cup broccoli, chopped
1/2 cup tomato sauce
1/4 cup white beans
1/2 cup spinach, frozen
3/4 tbsp dried basil
1 cup vegetable broth
1 oz spaghetti, whole wheat

Recipe Directions for Pasta Fagioli

  1. Prepare beans according to package, or use canned. Prepare pasta according to package, drain and set aside.

  2. Dice onion, bell pepper and celery and set aside. Mince garlic, set aside.

  3. Spray non-stick skillet with cooking spray and saute onion, bell pepper, celery, garlic and broccoli on medium-low heat unil onions are translucent. Reduce heat and add tomato sauce, broth, spinach, basil and beans. Cover and simmer 20 minutes.

  4. Serve with pasta.
