This came up from me cleaning out the fridge.

Recipe Ingredients for Pasta with eggplant.

1/2 onion
2 stalks celery
1 eggplant
1 tomatoe
1 serving Spicy Italian Veggie Sausage
1 lb spaghetti
1 tbsp Extra Virgin Olive Oil
1/4 teaspoon salt
1 teaspoon pepper
1 tablespoon balsamic vinegar
4 oz Mozzarella, Part Skim Milk Cheese
1/4 cup parmesan

Recipe Directions for Pasta with eggplant.

  1. Cook pasta according to direction.

  2. Heat olive oil in pan chop all vegetables in one inch cubes. Sautee vegetables with chopped up sausage until done.

  3. Mix cooked pasta with vegetables. Add salt pepper and vinegar and toss pasta mixture. Pat down in pan cover with chesse and put in 350 degree oven for ten minutes. Serve.
