Recipe Ingredients for Pasta e fagoli soup

1 cup dried cannellini beans
1/2 cup dried noodles
3 cups low sodium chicken broth
1/4 teaspoon dried sage
1 clove garlic
2 tablespoons tomato paste
1 cup water
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 tablespoons Olive Oil

Recipe Directions for Pasta e fagoli soup

  1. soak beans overnight

  2. bring beans to boil (water to cover), lower to simmer and simmer for 2 hours

  3. remove beans from pot, puree half of them

  4. add 1 clove garlic to heated olive oil, add paste, then broth and sage

  5. Return puree to soup and mix til combined

  6. add whole beans and raise soup to a boil

  7. add pasta and boil until al dente
