Yummy Vegan Pasta Dish, good for any meal or pick-me-up-snack

Recipe Ingredients for Pasta Della California

1 tablespoon olive oil
1 pound pasta
3/4 bunch broccoli
2 heads romaine lettuce
2 avocados
1/4 cup white wine
8 cloves minced garlic
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1 ground pepper
2 tablespoons lime juice
1/4 teaspoon lime zest
1 cup water

Recipe Directions for Pasta Della California

  1. boil water according to (linguine) pasta package. in the last minute of cooking time add broccoli to water. Drain and set aside.

  2. Add olive oil to a medium low heated pan and add the minced garlic, lime zest and red pepper flakes. cook for one minute, make sure that garlic does not burn.

  3. add white wine turn heat up to a boil. cook for 2 minutes until alcohol cooks out.

  4. add water (or vegetable broth if you have it on hand), lime juice, salt and pepper. bring to a boil and then allow to simmer.

  5. Add the lettuce (arugala or any other type is fine) and cook until just wilted.

  6. add the pasta and broccoli to this mixture and cook on low for 3 minutes until everything is combined.

  7. Cut up the avocado and add to the pasta until the avocado is just warmed through.

  8. Serve and eat!!!! (you could squeeze some lime juice on top afterwards or put some shaved parmigiano cheese on top if you aren't vegan and crave some extra decadence!)
