Cooked wholegrain macaroni stirred into a quick-to-make creamy sauce.

Recipe Ingredients for Pasta - Creamy Broccoli & Ham

3 cloves garlic
2 tsp olive oil
15 g leeks, sliced thinly
85 g red bell peppers, diced
50 g frozen chopped spinach
130 g broccoli, chopped
120 g zucchini, grated
45 g ham, chopped
70 g butter
35 g all-purpose flour
350 ml lowfat milk
50 ml water
210 g wholegrain macaroni - dry weight

Recipe Directions for Pasta - Creamy Broccoli & Ham

  1. Prepare a white sauce in a large saucepan with the butter, flour & milk. Season and keep warm.

  2. Cook macaroni as per package instructions.

  3. Whilst macaroni is cooking, sauté leeks, peppers & garlic in 1 tsp olive oil in a small non-stick pan. Add in zucchini and cook. Add this to the white sauce.

  4. Do the same for the broccoli with the remaining tsp of olive oil.

  5. Add in the ham and your favourite herbs. Simmer for approx 5 min. Season.

  6. Use the water to dilute the sauce according to your desired consistency.

  7. Stir in the cooked macaroni, toss and enjoy!
