Recipe Ingredients for Pasta and Chickpeas

1 1tsp Olive Oil
1 tbsp Olive Oil
1/2 large Onions
1 1/2 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
1 oz Parsley
3 clove Garlic
12 oz Penne
44 grams Ricotta Salata
1/2 cup (8 fl oz) Water
200 grams Tomatoes

Recipe Directions for Pasta and Chickpeas

  1. Bring large pot of water to boil.

  2. Heat 1 T oil in wide skillet and add onion and red pepper flakes. Cook for a few minutes and add chickpeas. Chop parsley, garlic and other desired herb, such as oregano or thyme and add a third of this to the pan. Season well with salt and pepper, add a little water or chickpea broth and cook slowly, adding more liquid as it cooks away.

  3. Salt the pasta water and cook the pasta. When done, drain and add to the pan along with the rest of the parsley mixture. Add 1 t olive oil, cheese, and tomatoes. Season with salt and pepper.
