Quick and easy pasta dish- Use up those spring greens!

Recipe Ingredients for Pasta with Chicken and Veggies

6 oz Chicken
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 cup Arugula
3 tbsp chopped Onions, Spring Or Scallions
8 oz Farfalle
3 tbsp Olive Oil

Recipe Directions for Pasta with Chicken and Veggies

  1. Cook pasta according to package directions. Drain.

  2. Cut chicken into small pieces (1/4 in. by 3/4 in.) Saute in 1 tbsp oil. Season with salt, pepper, cayenne to taste.

  3. Chop bell pepper into similar-sized pieces, and finely chop scallions. Add to drained pasta.

  4. When meat is done, add arugula to pan until slightly wilted, add to pasta.

  5. Add remaining oil, season with pepper and crushed red pepper to taste. Toss to coat, serve immediately.
