Pasta with Chicken and Spinach Recipe

Recipe Ingredients for Pasta with Chicken and Spinach

16 oz chicken breast
2 tsp salt
1/2 tsp pepper
1 tbsp olive oil
3/4 c onion, chopped
3 cloves garlic, chopped
1 c fat free chicken broth
29 oz canned diced tomatoes
16 oz spinach
1/4 c basil, chopped fresh
1 tbsp butter
16 oz whole wheat pasta, penne, ziti, bowties
1/4 c Parmesan, grated

Recipe Directions for Pasta with Chicken and Spinach

  1. Cook pasta according to directions. If using fresh spinach, add it to water 2 mins before pasta is done. If using frozen, defrost and add 4 mins before pasta is done.

  2. While boiling water for pasta, add diced chicken, onion and garlic to a fry pan that has been prepared with 1 tbsp olive oil. Add salt and pepper. Saute 5 mins.

  3. Add tomatoes and chicken broth to chicken mixture. Bring to a boil and simmer 5 mins.

  4. Add basil, as well as cooked/drained pasta and spinach. Mix well and simmer 5 mins. Do not let the pot go dry - add more broth if needed.

  5. Add parmesan just before serving.
