Pasta with Chicken and Broccoli Rabe Recipe

From Weight Watchers cookbook - one of my favorite recipes as it's very flavorful without a lot of work or ingredients! Add your own type of pasta - the recipe calls for spinach fettuccine, but you can use any semi-thick pasta. I used penne, or the little 'hat' pastas. Also calls for shredded parmesian cheese, but I prefer asiago or parmesan reggiano. You can also use regular broccoli if the Rabe is too expensive.

Recipe Ingredients for Pasta with Chicken and Broccoli Rabe

1 chicken breast, cut into 4 equal pieces
3 tablespoons olive oil, divided
1 tsp crushed red pepper
1 tsp dried oregano
1/4 tsp sea salt
1 lb broccoli
1/2 cup radicchio
1/2 purple onion, sliced
4 cloves garlic, minced

Recipe Directions for Pasta with Chicken and Broccoli Rabe

  1. Bring a pot of water to boil. When it's boiling, drop the broccoli crowns and boil for 2 minutes. Use a slotted spoon to remove crowns to a bowl.

  2. Bring the water back to a boil. Add a little salt and drop your pasta. Cook to al dente, drain and keep warm.

  3. Meanwhile, in a large skillet, heat 2 tablespoons of the oil until popping. Add chicken, salt, oregano and red pepper. Saute chicken about 5-7 minutes each side, moving around slightly. (Use a lid or spatter guard to keep from getting oil everywhere!) Remove chicken to a plate and keep warm.

  4. Heat remaining tablespoon oil in the pan. Add onion and garlic and saute until soft. Add broccoli and radicchio. Carefully toss to combine and add a dash more oil if needed. Saute 1-2 minutes until radicchio is soft. Add pasta and toss to combine.

  5. Serve chicken over pasta and sprinkle with a cheese of your choice.
