Makes 3 1/2 servings



substitute 1/2 cup fat free half and half for the milk for a creamer texture. You may need to add more chicken stock to get the right texture.

Recipe Ingredients for Pasta Caprese

1/2 lb chicken breast, boneless, skinless
8 oz mozzarella, fresh
3 tbsp olive oil
3 tbsp flour
3 cloves garlic
9 oz fettuccine
14 oz diced tomatoes
2 cups chicken broth, reduced sodium
1 cup whole milk
1 tsp salt
1 tsp pepper
1/2 tsp crushed red pepper
1 tbsp fresh basil
1/2 large onion
1/3 cup parmesan cheese, grated

Recipe Directions for Pasta Caprese

  1. Slice chicken thin and toss with salt, pepper and flour. Shake off excess flour. Saute in olive oil with garlic and remove from pan. Smash sauteed garlic and keep with chicken.

  2. Slice onions very thin and saute until translucent. While onion are cooking, drain tomatoes reserving liquid. Add tomatoes and crushed red pepper to onions and continue to cook for another 3 minutes. Add fettuccine or other pasta to pot and toss with onion and tomato. Add chicken broth and fat free half and half. Reduce heat to medium low and cover. Cook for 8 minutes.

  3. Add chicken and reserved tomato juice to pot and cook for another three minutes. Add parmesan cheese and basil. Cut mozzerella into 1/2 inch chunks and toss with hot pasta just before serving.
